Amazing that a barbecue guy can be so passionate about eating healthy sides, but Wayne Schafer has dedicated the past decade in trying to find a balance for the healthier options. Schafer often serves platters at fairs and festivals incorporating healthier side options instead of the usual fries. He says, “I try to pay attention to detail, like making fresh cut fries in zero trans fat oils like Soya Bean, which I’ve been doing for years before they outlawed it. Eating at the fair or festival in moderation doesn’t have to be unhealthy. In fact for catering I have great sides like this summer salad.”
